Authentic Szechuan Tofu & Veggie Stir-Fry

CC's Szechaun Sauce & Francesca's Herbs & Spices are conveniently packaged in a trio kit for you to enjoy. CC is another fabulous woman I adore aligning myself with. Supporting women in business lights my heart. My personal favourite mushrooms are cremini & frozen corn works well here too. In fact, I actually prefer the taste of frozen corn, although mini corn cobs are super cute. Tofu was not my favourite until I discovered CC'S sauce & now I consume it more often.

Ingredients
- 1/2 package Extra-Firm Tofu
- 12 Mini Corn Cobs
- 12 Mushrooms
- 2 Spring Onions
- 15 ml Coconut/Olive Oil
- 15 ml CC Szechaun Sauce
- 5 ml Francesca's Herbs
- 5 ml Francesca's Spice
- S&P to taste
Ingredients - Rice
- 125 ml Basmati Rice
- 250 ml Water
- 15 ml Coconut/Olive Oil
- S&P to taste
Instructions
- I use a rice cooker to make my rice, usually takes 20min.
- Drain the liquid from the tofu, pat dry with paper towel & drizzle with the CC Sauce.
- Warm the coconut/olive oil on high heat. Quicly temper with the Francesca Herbs & Spices.
- Add the mushrooms & corn. Continuing stir-frying for 3-5 minutes.
- Add the tofu, quickly stir. Sprinkle with finely chopped spring onions.
- Add S&P to taste.
- Serve with rice.
Notes
There are many variations to this recipe, play with different vegetables depending on what is in season and what you have on hand.
